Crêpes on a Sunday Morning
Ingredients
3/4 cup all-purpose flour
2 eggs
1 cup milk
pinch of salt
1 tablespoon butter, melted
Directions
• In a blender, add all ingredients except butter. Blend until smooth.
• Mix in melted butter.
• Heat a lightly buttered non-stick frying pan over medium high heat. Scoop the batter onto the pan, using approximately 1/4 cup for each crêpe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
• Cook the crêpe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
• Cook the rest of the crêpes without adding any more butter to the pan.
• Sprinkle with lemon juice and sugar and serve warm.
